Wild Leaven Bakery is a small family-owned and operated business that specializes in long fermentation artisanal sourdough bread and baked goods using organic, local grains and ingredients.
Wild Leaven Bakery strives to source all organic ingredients and support farmers and ranchers located in the Northern New Mexico and Southern Colorado bioregion, while giving priority to heritage and heirloom grains.
At our Taos and Santa Fe shops, we offer breakfast and lunch all day, and during the Taos Farmers Market’s season, you can meet us there on Saturday mornings to pick up your favorite bread and baked goods. We also ship our bread nationwide upon request.
Our unique 24-hour fermentation process comes with numerous benefits including delicious full sourdough flavors, lower glycemic index numbers, breakdown of anti-nutrients in grains like phytic acid, breakdown of gluten and carbohydrates by microorganisms, longer shelf life, and easier digestion.
