In 1977, the Copper Caboose opened its doors at the corner of 4th Street and Boston Avenue in Lubbock, Texas. Founded by John and Frank Fitzpatrick and Frank Smith, it was the first restaurant in Lubbock, Texas to serve fajitas. Serving both chicken and beef fajitas and then added many traditional American and authentic Mexican dishes, prepared by Lupe Gonzales. The 50th Street Caboose opened in August of 1990 at the corner of 50th Street and Slide Road. It was designed by managing partner Phil Bradley and owner Bob Jordan with a few twists to enhance the proven Caboose concept. A midway with over 100 games and a redemption center stocked full of toys, novelties, and giant stuffed animals help to enhance the fun atmosphere. Serving the same fine Mexican dishes with a few new twists from George Amaya.The 50th Street Caboose also has party rooms available to conduct meetings, throw birthday parties, have team parties, view sporting events, or have a private get-together with friends. The first of two remodels to the 50th St. Caboose was completed in 1992, increasing it to 17,500 square feet. In 1998, a second remodel brought the Caboose to its current size of 20,000 square feet.
